Method
- 1For the syrup: boil sugar with 2 cups water, cardamom pods, and saffron. Simmer 5 minutes until slightly sticky. Keep warm.
- 2Mix gulab jamun powder with milk to form a soft dough. Rest 5 minutes.
- 3Form into smooth, crack-free balls about 1 inch wide.
- 4Heat oil to 280-300°F (low-medium). Fry balls in batches, gently rolling, until uniformly golden brown.
- 5Transfer hot fried balls directly into the warm syrup. Soak at least 1 hour.
- 6Serve warm or at room temperature.
